The history of the Perez Cruz winery dates back to the middle of the nineteenth century when Pablo Perez Zanartu, a famous Chilean businessman, bought Liguai in Helquen State. This area is presently located near Los Andes in Maipo Alto Valley. Around the end of the century his descendants decided to create a viticultural project in his memory. With the objective of quality winemaking the delicate and rare grape varieties of Maipo Alto Valley were chosen.
The harvest takes place manually in bins that fills only until half. Thus, each cluster is handled in a gentle and delicate manner, to avoid damages that can harm the final product. An underground warehouse with temperature and controlled humidity, cubas of different capacities and diverse qualities from French and American barrels, grant the flexibility necessary to contain large volumes with maximum quality.
A gravitational process characterizes the line of production of wines of greater complexity in all stages. The de-stemmed grapes are put in cubas of stainless steel, where the alcoholic fermentation takes place under controlled conditions of temperature and humidity.
